This is the second gallon from the 6-gallon carboy. This brew was started on 10/16/2022 and finished primary in 34 days with a gravity of 0.996 and an ABV of 13.37%.
I began this brew by making a tea by boiling a couple cups of water and adding a large amount of dried Chamomile buds and and another large amount of dried Yarrow petals. I let the tea simmer and as it cooled I added about a cup of honey to back-sweeten
In the secondary one-gallon carboy I added the tea from above, a cinnamon stick, a few whole cloves, cardamom, and a vanilla bean, Hopefully the honey doesn’t start another fermentation process but it may,.
My plan is to keep this brew in secondary for 2 weeks, I may then bottle it or let it sit for a few more weeks
