The number of tomatoes we are getting from the garden is almost unimaginable. We’re thinking of ways to use them. I decided to throw together a pot of chili today and use as many as I can. Below is the recipe I used.
Ingredients
- 1 1/2 pounds ground turkey
- 2 Tbsp butter
- 8 cups chopped tomatoes
- 2 green peppers, diced
- 2 large onion, diced
- 6 cloves garlic, minced
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 tsp Italian seasoning
- 2 cans chili beans, not drained
- 1 can black beans, drained
- 2 Tbsp chili powder
- 1 tsp smoked paprika
Instructions
- Melt butter in a large Dutch oven or stockpot over medium-high heat.
- Add the onions and sauté until they begin to soften, approximately 5 minutes.
- Add ground beef and garlic. Cook until the beef is browned.
- Add remaining ingredients and put the lid on and reduce heat to a slow simmer.
- Simmer for at least an hour.
